Vanilla-Orange-Chocolate-Nut-Filling Sandwich Cookie

Sugary, light vanilla cookies pizzazzed up with orange zest sandwich creamy almond-chocolate filling.

Still have to come up with a better name for these . Maybe you could help. The idea for this creation started with the chocolate-almond spread I made a couple of days ago. I thought it would make a delicious filling in a sandwich cookie, and since the spread is chocolate, I wanted the cookie to be vanilla. I found a basic sugar cookie recipe, omitted the chocolate the recipe called for and added vanilla and orange zest. “Perfect!” I thought. A vanilla cookie with orange zest sandwiching chocolate almond spread. How about the name VOCNFS Cookie to borrow from the texting world? Uh… no. I’m open to suggestions!

Vanilla Orange Sandwich Cookie

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cups sugar
  • 1/2 cup plus 2 tbsp (1 1/4 sticks) room-temperature, unsalted butter
  • 1 large egg
  • 1 tsp vanilla
  • almond-chocolate spread

Directions:

  1. Preheat oven to 375°F.
  2. In a medium bowl, mix the flour, baking soda, baking powder, salt, and sugar. Add zest. Mix. Add butter. Mix. Then add egg and vanilla. Continue mixing until dough comes together.
  3. Take rounded teaspoons of batter. Roll into a ball and flatten for uniform cookies. Place approximately two inches apart on a parchment-paper-lined baking sheet. Bake for 9 minutes, until cookies are slightly cracked on the top.
  4. Remove from oven and set baking sheets on a rack to cool.
  5. To assemble the sandwiches: take one cookie and smear chocolate-nut spread evenly on the bottom of the cookie (because the bottom side will be flat. You want the cracked tops of the cookie to be on the outside.) Take a matching cookie and gently press flat side into the chocolate spread. Voila! You have a sandwich cookie. Continue with remainder of cookies.

We took these cookies to our friends’ house. They gave these cookies high marks on the would-you-buy-these-in-a fancy-cookie-shoppe test!

Chocolate Truffle Cookies with Pecans

Dedicated to fully addicted chocoholics, this chocolatey chocolate with chocolate-chip cookie is not for people who just “like” chocolate. Are you getting how chocolatey these are? 

This low-flour cookie is dense and fudge-like. Because the dough is quite sticky, I recommend using a cookie scoop and then rolling the chilled dough in a coating such as chopped nuts, confectioner’s sugar or coconut in order to make handling the dough easier. This extra touch also enhances the taste, texture and the presentation.

Chocolate Truffle Cookies

makes 3 dozen cookies

Ingredients

  • 2 cups semisweet chocolate chips, divided equally
  • 6 tablespoons butter
  • 3 eggs
  • 1 cup white sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup finely chopped pecans

Directions

  1. In a microwave or in a bowl warmed over a pan of simmering water, place the butter and 1 cup of chocolate chips and melt together, stirring occasionally until smooth. Remove from heat and set aside to slightly cool.
  2. In a large bowl, beat eggs and sugar until thick and pale, about 2 minutes. Stir in the vanilla and the chocolate mixture until well mixed.
  3. In a separate bowl, combine the flour, cocoa powder, baking powder and salt. Gradually stir into the chocolate mixture. Fold in remaining 1 cup chocolate chips. Cover dough and chill for at least an hour or overnight.
  4. Preheat oven to 350 degrees F (175 degrees C). Roll chilled dough into 1 inch balls. Roll dough balls to coat with chopped pecans. Place on ungreased cookie sheets so they are 2 inches apart.
  5. Baking time will vary depending on how chilled the dough is when it goes into the oven. Place cookies into preheated oven. Check at 9 minutes. Finished cookies should be puffed up and slightly cracked on top. This may take up to 15 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Rugelach with Cranberries and Pecans

I’ve always enjoyed rugelach. After discovering that the primary ingredients in the dough are butter and cream cheese, it is obvious why these cookies are so good. I found several recipes that had the same premise for the dough and a variety of different fillings. Armed with different recipes and ingredients that were in my pantry, I created a version of rugelach with ingredients we’d brought with us to the bush.  It came out delicious! The filling is a fruity complement to the soft and flaky crust.

Arctic Rugelach

Ingredients:

Dough

  • 1 cup unsalted butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
Filling:
  • 1/2 cup fruit preserves (I used apricot, peach, and mango preserves)
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup chopped dried Craisins
  • 1 cup finely chopped pecans
  • 6 tablespoons white sugar
Coating (applied just prior to baking):
  • whites from two eggs
  • 2 tablespoons white sugar
  • 1 teaspoon ground cinnamon
 Directions
  1. In a medium bowl, cream together the butter and cream cheese. Beat in 1/4 cup of sugar and the vanilla extract. Combine the flour and salt; stir until well blended. Turn out dough onto a piece of plastic wrap and press together to form a ball. Divide the ball into 4 portions. Shape each portion into a flat rectangle, so it is ready to roll after being chilled. Wrap each rectangle in plastic and refrigerate for at least 2 hours or overnight.
  2. Preheat the oven to 350 degrees F (175 degrees C). In a small bowl, toss together the brown sugar, 6 tablespoons white sugar, craisins and finely chopped pecans. Set aside.
  3. Take the 2 tablespoons white sugar and mix with the one teaspoon cinnamon in a small bowl. Set aside. This will be used to sprinkle over the top of the cookies before baking.
  4. Roll out each portion of dough into a rectangle about 1/8 inch thick. Spread about 2 tablespoons of the fruit preserves over each rectangle, then sprinkle each one with some of the Craisins & nut mixture. Roll up the rectangle, jellyroll-style, so you have a long log shape. Brush log with egg whites and generously sprinkle with the sugar & cinnamon mixture. Using a knife, cut each log into 12 pieces and set on parchment-lined or greased baking sheet.
  5. Bake for 16 to 18 minutes at 350 degrees F in the preheated oven, until golden. Rotate the cookie sheet halfway through to ensure even baking.
  6. Remove cookies from baking sheet to cool on wire racks.
  7. As tempting as they will be hot out of the oven, let the cookies cool before you enjoy them. They’re better cool.

Yields: 48 cookies

Mailanderli (Swiss Butter Cookies)

Growing up, my favorite Christmas cookie was Mailanderli. This Swiss recipe yields buttery, crunchy golden cookies with a citrus essence. As a kid, I loved making the dough and cutting shapes with shiny metal cutters. After the cookies were baked, we kept them in a brightly colored Christmas tin. I remember eating them by the dozen. Christmas is here again and this year I was inspired to bring this tradition back into my own home.

Mailanderli

Ingredients

  • 4 eggs
  • 1 1/4 cups white sugar
  • 1 1/8 cups butter, melted and cooled to lukewarm
  • 1 pinch salt
  • 4 cups all purpose flour
  • 1 1/2 teaspoons grated orange (or lemon) zest
  • 2 egg yolks, beaten

Directions

  1. Beat the two egg yolks and set aside. These will be used to brush to the tops of the cookies later.
  2. Whisk eggs in a large bowl. Blend in sugar and beat until mixture is thick and pale, about 10 minutes. Mix in the melted butter and salt. Gradually fold in the flour and orange zest. Cover and refrigerate for at least one hour or, preferably, overnight.
  3. Preheat oven to 325 degrees F (165 degrees C). Lightly grease cookie sheet.
  4. On a floured surface, roll out dough to 1/4 inch thickness. Cut into desired shapes using cookie cutters. Place cookies on greased cookie sheet and brush with beaten egg yolks.
  5. Bake in preheated oven until golden at the edges, 15 to 20 minutes. Cool cookies on racks.
Yields about 50 cookies

Stuffed Cookies or What Do I Do With My Leftover Halloween Candy?

What to do with leftover Halloween candy? We could eat it. We could bring it to work and subject our co-workers to it. Both choices are possible, but not very original.

After searching around for recipes, I came across a blog where the author stuffed cookies with candy pieces. Hmmm… She provided no recipe, so I was on my own. One of the most classic and tested cookies is Nestle’s Tollhouse cookie recipe on the back of the morsel bag. As a matter of fact, I was just talking to a friend who told me her mother was putting together a family recipe book and was going to include the Nestle recipe because it was just the best. So I followed the Tollhouse recipe sans chocolate chips. I flattened one scoop of dough on a cookie sheet, inverted a miniature Reese’s Peanut Butter Cup, flattened another scoop on top and baked as directed.

These cookies came out fabulous! And now I’ve got a more original way of sharing left-over Halloween candy.

Caramel Apple Cookies

The inspiration? A granny smith apple and a bag of individually wrapped caramels.

The two items sitting in our kitchen made me think “wouldn’t an apple cookie with a caramel tucked inside taste like fall?”

Let me tell you, it does! Hot cinnamon flavor dancing around toasty cooked grated apple pieces.  Make sure you take two bites so you can savor the caramel twice!

Here it is: Caramel Apple Cookies

1/2 cup butter, softened

1 cup packed brown sugar

1 tsp vanilla

1 egg

2 cups flour

1/2 tsp salt

1/2 tsp baking soda

1 tsp ground cinnamon

1 shredded granny smith apple

15 wrapped caramels

Preheat oven to 350F. Line baking sheet with parchment, or lightly grease sheet.

In a large bowl, stir together flour, salt, baking soda, and cinnamon.

In another bowl, cream together the butter and sugar. Add vanilla and egg and beat until light and fluffy. Add flour mixture and stir to combine. Fold in apple pieces.

Take caramels out of cellophane and cut in half.

Drop tablespoon sized drops of dough onto baking sheet with some space in between (they will spread). Push half caramels into center of cookie drop. Make sure to leave some dough under the cookie so the caramel doesn’t burn.

Bake for 12 minutes or until edges are set. Allow to cool slightly on baking sheet and finish cooling on a wire rack.
