Butter Toffee Almonds

Plain, cayenne pepper, or rock salt. We liked all three. Which will you make?

We don’t like to visit friends empty-handed, especially when we invite ourselves over to watch a sporting event on TV. In bush Alaska, there aren’t six-packs of beer or bottles of wine to grab at the store. Our ready gift is usually something we’ve created in the kitchen. Recently we were running late for one of the March Madness basketball games and had nothing already prepared, so a few whirls in the kitchen and we had buttered toffee almonds – three ways. The original plain version is quite tasty. Two other versions were made by sprinkling cayenne pepper on some for that back-of-your-throat-bite and by sprinkling large grains of sea salt for another pleasant surprise. All three versions were tied for first place. This recipe was finished in 15 minutes. Lucky for us, the walk over in sub-freezing temperatures cooled the almonds enough to eat as soon as we entered our friends’ home.

Butter Toffee Nuts Recipe

Ingredients

  • 1 cup sugar
  • 1 cup butter (2 sticks)
  • 3 tablespoons water
  • 3 cups whole almonds (or use 3 cups peanuts)
Directions
  1. Use a deep, heavy-bottomed saucepan to heat all of the ingredients, except the nuts. Stir the mixture constantly to prevent scorching. Using a candy thermometer and medium heat, bring the mixture to 300 degrees. The temperature will rise as the water is boiled off, and this can happen quickly, so be prepared to lower the heat or remove the candy from the heat as needed.
  2. As soon as the mixture reaches the desired temperature, remove it from the stove and add the nuts. Mix until all nuts are coated. Pour the nut mixture onto a greased cookie sheet spread into an even layer. Let fully cool. This step works well on parchment paper.

Scallop and Shrimp Chawan Mushi with Smoked Quail Eggs

Chawan mushi combines two of my favorite things: custard and an element of pleasant surprise. Although the custards served to me (mostly by my grandmother) in my youth were invariably sweet, it was love at first spoonful when I had my first taste of chawan mushi in a Tokyo restaurant. On that occasion, I would have been happy just to enjoy the small ramekin of savory soupy custard that came with my meal. But when one of those spoonfuls revealed a sweet shrimp, and another a tender boiled quail egg, I was full-blown, head-over-heals gone.

Japanese diners seem to think of chawan mushi more as a soup than a custard, and I have to admit that over time, I have come to prefer this dish fairly loosely set. In addition to fresh, grilled or smoked seafood (a bit of smoked salmon makes a nice finishing piece), fresh vegetables such as peas, butter beans, lotus root or mushrooms, or a tender piece of salty grilled chicken, beef or wild game all work well. Creative cooks may want to experiment with the basic dashi recipe or substitute chicken or beef broth. A pinch of smoked sea salt adds another dimension to this versatile dish which can be served hot to take the chill of a winter evening or refreshingly cold on a warm summer day.

Below are the directions for Scallop and Shrimp Chawan Mushi with Smoked Quail Eggs – with much appreciation to a Japanese friend who mailed us a package of smoked quail eggs, thus inspiring this dish. By the way, chawan means tea cup; mushi means steaming.

The Watercourse, a signed and numbered giclée by Whitehorse, Yukon Territory artist Nathalie Parenteau serves as the backdrop for this All-Clad poacher. With its raised tray, it’s perfect for steaming chawan mushi either in an oven or on a stove top. In the past, I’ve improvised with a large round kettle fitted with an inverted shallow wicker basket. The same kettle also works with an inverted metal strainer that happens to fit.

Jack’s Dashi

Ingredients

  • 2 cups water
  • sheet of dried kombu (Japanese kelp) about 4″ x 4″ (about 5 grams)
  • 1 teaspoon “Better than Bouillon Lobster Base” (or make traditional dashi with 1/4 cup dried bonito flakes)

Directions

  1. Add two cups of water and the kombu to a pan. Heat over medium heat.
  2. Just before the water boils, remove the kombu. Turn off heat and stir in the lobster base bouillon.
  3. Strain through cheese cloth or fine-mesh strainer to remove stray pieces of kombu (or bonito flakes, if those are used). The lobster bouillon base will create a slightly darker dashi than bonito flakes. In the finished chawan mushi, this will create an attractive cream color.
  4. Set aside to cool.

Scallop and Shrimp Chawan Mushi with Smoked Quail Eggs

Ingredients

  • 6 small ramekins, preferably with loosely fitted lids. Plastic wrap with a small puncture (to allow steam to escape) can be used to cover the ramekins if lids are not available.
  • 2 cups dashi (see recipe above)
  • 3 large eggs
  • 1 tablespoon soy sauce
  • 6 sea scallops
  • 6 sweet shrimp, peeled, deveined, tails removed (Alaskan shrimp are similar to the ama-ebi of Japan and are perfect for this dish)
  • 6 smoked quail eggs
  • (optional) sea salt to taste
  • (optional) 2 tablespoons good sake

Directions

  1. In a bowl, whisk eggs until smooth. Make sure dashi is cool (so it won’t cook the eggs) and stir into egg mixture. Add soy sauce (and sake, optional) and mix together, but avoid mixing so vigorously that foam is created. Taste for appropriate saltiness. If more salt is desired, use sea salt. Set mixture aside.
  2. Slice scallops depth-wise into three or four parts. Place scallops and 1 shrimp each into the ramekins.
  3. If there are bubbles or foam on the egg and dashi mixture, use a spoon to remove. The finished chawan mushi should be smooth. Cover the scallops and shrimp with the egg and dashi mixture so that ramekins are about 2/3 full. Cover each ramekin with a loosely fitting lid or punctured piece of plastic wrap.
  4. Arrange the covered ramekins in a steamer and gently steam for 12 minutes, until mixture is loosely set.
  5. Turn off heat. Place a smoked quail egg atop each chawan mushi, cover with lids again, and keep them in the steaming pan so that the custard continues to set and the egg warms through – approximately 3 – 5 additional minutes.

This dish makes a delicious appetizer, can be served as one would serve a soup, or as part of the main meal. It will keep nicely in the refrigerator for a day or two. Our village in bush Alaska is dry, so sake is not an option. But I highly recommend you include it, as it really compliments the flavors of this dish – and pairs well as a drink served with the finished chawan mushi.

Rosemary Kalamata Olive Loaf

Aromatic and flavorful, tonight this rosemary kalamata olive loaf will accompany a moose roast. Roasted lamb, too, would be a good choice, and we anticipate it pairing well with Italian or Greek dishes, as well. This morning we served toasted slices with olive oil with halibut omelets. During the baking process, our kitchen was filled with the irresistible scent of rosemary. We agreed it was one of the best savory breads we’ve ever had.

This is another recipe from 300 Best Bread Machine Recipes by Donna Washburn and Heather Butt. Monitor the dough during the kneading process to make sure the amount of flour/moisture is right. Because the kalamata olives added moisture, I found I needed to add a little more flour than is indicated below.

Olive Rosemary Loaf

Ingredients

  • 1 cup water
  • 3/4 cup kalamata olives, pitted and chopped coarse, extra moisture gently squeezed out in paper towels
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 2 tbsp extra virgin olive oil
  • 3 1/4 cups all purpose flour
  • 1/4 cup fresh rosemary (or 2 tsp dried)
  • 1 1/4 tsp yeast

Directions

  1. Measure ingredients into baking pan in the order recommended by the bread machine manufacturer. Insert pan into the oven chamber. Start your machine. During the kneading phase, check to make sure the dough is of proper consistency. Add flour or water as needed.

Chocolate Truffle Cookies with Pecans

Dedicated to fully addicted chocoholics, this chocolatey chocolate with chocolate-chip cookie is not for people who just “like” chocolate. Are you getting how chocolatey these are? 

This low-flour cookie is dense and fudge-like. Because the dough is quite sticky, I recommend using a cookie scoop and then rolling the chilled dough in a coating such as chopped nuts, confectioner’s sugar or coconut in order to make handling the dough easier. This extra touch also enhances the taste, texture and the presentation.

Chocolate Truffle Cookies

makes 3 dozen cookies

Ingredients

  • 2 cups semisweet chocolate chips, divided equally
  • 6 tablespoons butter
  • 3 eggs
  • 1 cup white sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup finely chopped pecans

Directions

  1. In a microwave or in a bowl warmed over a pan of simmering water, place the butter and 1 cup of chocolate chips and melt together, stirring occasionally until smooth. Remove from heat and set aside to slightly cool.
  2. In a large bowl, beat eggs and sugar until thick and pale, about 2 minutes. Stir in the vanilla and the chocolate mixture until well mixed.
  3. In a separate bowl, combine the flour, cocoa powder, baking powder and salt. Gradually stir into the chocolate mixture. Fold in remaining 1 cup chocolate chips. Cover dough and chill for at least an hour or overnight.
  4. Preheat oven to 350 degrees F (175 degrees C). Roll chilled dough into 1 inch balls. Roll dough balls to coat with chopped pecans. Place on ungreased cookie sheets so they are 2 inches apart.
  5. Baking time will vary depending on how chilled the dough is when it goes into the oven. Place cookies into preheated oven. Check at 9 minutes. Finished cookies should be puffed up and slightly cracked on top. This may take up to 15 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Overnight French Toast with Blueberries

Blueberry French toast made from leftover challah bread makes for a gourmet breakfast. Thick slices of apple-smoked bacon and freshly brewed cups of espresso roast coffee rounded out this Spring Break breakfast.

Overnight French Toast with Blueberries

Ingredients

  • 6 slices day-old (or older) challah, cut into 1 inch cubes (other brioche-style breads can be substituted)
  • 1/2 (8 ounce) package cream cheese
  • 1/2 cup fresh blueberries (or dried blueberries soaked in hot water for five minutes)
  • 4 eggs, beaten
  • 1/2 cup milk (I used soy milk)
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/3 cup maple syrup
Directions
  1. Lightly grease a baking dish approximately 8 x 8 inches. (My dish was 7 x 10.)
  2. Spread cream cheese on top of bread slices. Cut slices into 1-inch cubes. Arrange the bread cubes in the dish. Sprinkle with 1 cup blueberries.
  3. In a large bowl, mix the eggs, milk, cream, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight.
  4. Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
  5. Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned.

I opted to sprinkle chopped pecans onto the French toast during the last 10 minutes of baking. The French toast is not overly sweet, which is what I was going for. You could mix in confectioner’s sugar with the cream cheese for a sweeter version. Cinnamon would also be a nice addition.

Banana Bread with Crunchy Walnut Streusel

We brought these beautiful loaves of banana bread to a staff potluck, supplying cream cheese for a spread. They were an instant hit.

I have a tried and true banana bread recipe. It’s actually a fruit bread recipe in which I swap out the fruit and the spices. The recipe results in bread that is moist and flavorful. With an impending potluck, I wanted to amp up the recipe and my thoughts turned to coffee shop offerings where muffins and slices of sweet bread covered with streusel topping are always among the favorites. We love to slather a thick slice of this bread with cream cheese and then press the cream cheese into whatever crunchy walnuts may have fallen off. This makes for one decadent slice of bread!

Banana Bread with Crunchy Walnut Streusel

Makes two loaves

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tbsp ground cinnamon
  • 1/2 tsp baking soda
  • 1 1/2 cups granulated sugar
  • 1/2 cup applesauce
  • 1/2 cup melted unsalted butter
  • 4 eggs
  • 2 tsp vanilla extract
  • 2 cups mashed bananas – the older the better

Topping

  • 1 cup walnuts
  • 1/2 cup brown sugar
  • 1/2 cup all purpose flour
  • 4 tbsp butter, room temperature

Directions

  1. In a large bowl, combine flour, baking powder, salt, cinnamon, and baking soda. Set aside.
  2. In a mixing bowl, beat granulated sugar, applesauce and 1/2 cup of melted butter together. Add eggs, one at a time, beating well after each addition. Stir in vanilla.
  3. Stir wet ingredients into dry ingredients until just moistened. Stir in bananas.
  4. Prepare streusel topping. Mix 1/2 cup flour, nuts, brown sugar and 4 tbsp butter until mixture resembles coarse crumbs. Set aside.
  5. Pour banana bread batter into two greased 8 in. x 4 in. x 2 in. loaf pans. Bake at 350 degrees F for 30 minutes.
  6. Pull loaf pans out of oven and pack streusel nut mixture on top of loaves. Bake for an additional 30 – 35 minutes or until a toothpick comes out clean. Cool for at least 10 minutes before removing from pans to wire cooling racks.

Pour yourself a big cup of coffee. Cut a thick slice of this bread and smear a generous amount of cream cheese onto it. Sprinkle any crumbs that have fallen off your slice back onto the cream cheese. Put on some coffee shop music. Close your eyes, take a bite, and imagine yourself in coffee shop in one of the world’s great cities… or in a hometown bakery.

Way-Better-Than-Pecan-Pie Bars

When I was first introduced to pecan pie, I didn’t like it. I love sweets, but pecan pie was too gloppy. I was disappointed that it had more “goo” than pecans. The idea of pecan pie is a good one, but I’ve always thought it could be improved. Jack says I’ve just never had good pecan pie. I bet he’s right. 😉

Today, I found a blog that had a recipe which seem to do the trick. Amy at Elephant Eats took all the flavors of pecan pie (plus chocolate) and converted it to a cookie bar.

I did make a few changes. First of all, I halved the recipe. Although we have visitors to help us eat our confections, there is no need to have too many sweets around…they are too tempting. I also increased the pecans to avoid the disappointment of “too much goo and not enough pecans.” They came out terrific. And they are way better than pecan pie!

One last piece of advice – no matter how much your husband begs you, don’t cut into these bars until they are cool. They will fall apart!

Ingredients

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/2 cup softened unsalted butter
  • 1/4 teaspoon salt
  • 3/4 cup dark Caro syrup
  • 1/2 cup semi-sweet chocolate chips
  • 2 eggs
  • 3/4 teaspoon vanilla
  • 2 cups chopped pecans

Directions

1. Preheat oven to 350 F.

2. Grease bottom and sides of a 7 1/2″ x 11″ pyrex glass pan.

3. In bowl, mix flour, 1/4 cup of sugar, butter, and salt until it resembles coarse crumbs. Press into bottom of pan. Bake for 20 minutes.

4. In a pot, using low heat, stir corn syrup and chocolate until it’s melted and well blended. Remove from heat. Stir in the rest of the sugar, eggs, and vanilla until blended. Stir in pecans.

5. Pour filling over hot crust. Bake for 30 minutes or until firm around edges, but slightly soft in center. Cool on wire rack. Cut into bars.

Sunshine Muffins

Some mornings just seem to call for fresh baked muffins. In just 45 minutes, we were enjoying steaming cups of coffee with these muffins which are chock full of grated carrots and pears, nuts and raisins. We love these muffins smeared with cream cheese. All the healthy ingredients make me feel like I’ve had a dose of sunshine–a great feeling on a morning when it’s negative 9 degrees outside and we still have eleven days to go until we see the sunrise. The recipe below can be easily modified based on what’s in the kitchen.

Sunshine Muffins:

  • 2 cups all-purpose flour
  • 1 1/4 cups white sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups shredded carrots
  • 1 pear – peeled, cored and shredded
  • 1/2 cup raisins
  • 1/2 cup chopped pecans
  • 1/2 cup mashed overripe banana
  • 1/2 cup applesauce
  • 4 eggs
  • 2 teaspoons vanilla extract
  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  2. In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, and shredded pear.
  3. In a separate bowl, beat together eggs, applesauce, mashed banana, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
  4. Bake in preheated oven for 25 minutes, until a wooden toothpick inserted into center of a muffin comes out clean.

Yields 12 muffins.

Roasted Garlic and Squash Gnocchi

 Acorn squash and garlic, roasted and ready to become part of a batch of gnocchi.

This was my first attempt at homemade gnocchi, a form of pasta I really enjoy. The recipe I came up with today wasn’t difficult, but it was somewhat time consuming. I oven-roasted the acorn squash and the garlic for about 45 minutes. I then squeezed the soft, roasted contents out of each garlic skin (not the husks, but the skin itself) and mashed the garlic together with the squash once it was cool enough to handle. Then, I rolled the gnocchi dough into long, thin logs and chopped them into bite-sized pieces. I used a fork to make the traditional marks on the gnocchi–these slight indentations help sauce stick to the pasta.

Roasted Garlic and Acorn Squash Gnocchi

3 cups all purpose flour (and more to coat rolling surface)

one egg

dash salt

Preheat oven to 350 degrees. Coat baking sheet with olive oil. Cut squash in half and remove seeds. Cut squash halves into 3 or 4 pieces. Brush olive oil onto squash pieces and place them skin side down. Place garlic cloves onto squash. Bake for 40 minutes or until squash and garlic are soft (a fork should go easily through the squash). Remove from oven and allow to cool.

When cooled, squeeze roasted garlic out of its skin into a bowl. Scoop soft squash meat out of its skin and place into same bowl. Mix thoroughly. Then mix in flour, egg and salt. You may need to add in more flour if mixture is too sticky. Dough should form into a nice ball.

Slice off an inch or so of the ball and roll it with the palm of your hands into a long “worm” no more than an inch in diameter. Make sure your surface is well floured. Cut off  pieces that are a little smaller than bite-sized. If you would like to make gnocchi with the fork indents, go to youtube and check out one of the videos. As they say, a picture is worth a thousand words. Once the gnocchi are formed, cook them in a pot of boiling water until they float to the top.

Serve with butter or olive oil and parmesan cheese or with a light tomato sauce. The gnocchi can also be fried in olive oil or butter and served with parmesan cheese.

This recipe makes about 200 gnocchi. Extras can be frozen.

Warm Memories of Savory Stuffed Cabbages

Food memories have a huge positive impact on people’s lives. I once wrote a ten page essay titled “Soul Food”  to challenge a college English class. It was an analysis of foods from my past and how they have influenced the person I am now. I loved certain dinners my mom made…cheese pies and apple pies, beef burgundy stew over mashed potatoes, raclette. It’s obvious why, during the winter months, this blog turns most of its attention to food.

One of my strongest food memories is of my grandmother’s stuffed cabbages. We didn’t get to see my Nana very much as we lived 3,000 miles away. She would always spend hours in the kitchen, preparing for our visits. Sometimes, when she would visit us, she would cook cabbage rolls at our house. I especially loved the sweetness of the meat enveloped in the slow-cooked cabbage leaves. We asked her for the recipe but for whatever reason she never shared it. Maybe she thought it was her special gift to us to make it, not to teach us how to make it. After she died, I thought I would never taste Nana’s cabbage rolls again.

Several years ago, I bought  a crock pot and an accompanying recipe book. The book was an ordinary crock pot book. I cooked my way through it until I got to the stuffed cabbage recipe. My expectations were low. I was surprised and pleased (surpreased) to taste the results of the recipe which were nearly identical to my Nana’s cabbages!

I wound up selling the recipe book when I moved to Alaska. I did keep the one cabbage recipe in the event I wanted to recreate this delicious dish. Turns out at $7 a head, cabbage is not a depression era vegetable in the bush. It is gold…too rich for my blood. As luck would have it, a friend had most of a cabbage head she no longer wanted and traded me for granny smith apples she needed for a pie. Barter is still alive and well in bush Alaska!

From Crock-Pot Specialties

Spicy Cabbage Rolls

6 large cabbage leaves

2 tbsp water

1/4 cup minced onion

1/2 lb. lean ground beef

1 tbsp ketchup

1 small egg, lightly beaten

2 tbsp raw long grain rice

1/2 tsp salt

1/8 tsp pepper

8 oz. stewed tomatoes

2 tbsp raisins

2 tbsp cider vinegar

2 tbsp brown sugar

2 tbsp dark corn syrup

In a saucepan, immerse cabbage leaves in enough boiling water to cover and simmer for about 5 minutes or until pliable. Remove from water carefully and drain. In bowl, make stuffing by combining water, onion, ground beef, ketchup, egg, rice, salt, and pepper. Cut out heavy ribs from the cabbage leaves. Divide stuffing into 6 equal portions; place a portion in center of each cabbage leaf and fold the leaf around it. Secure with a wooden toothpick. Place the rolls seam side down in the crock-pot.

Combine remaining ingredients and pour over cabbage rolls. Cover and cook on Low setting for 8 – 10 hours.

Remove rolls to warm serving platter. Spoon sauce over rolls before serving.

2 or 3 servings (about 1 1/2 quarts)
